Gamlin Restaurant Group Welcomes Chef Grace Dinsmoor and Michael Burch, Names Dustin Parres General Manager

Chef Grace Dinsmoor and Michael Burch are the newest members of the Gamlin Restaurant Group (GRG). Chef Grace, known for introducing award-winning Spanish tapas and cuisine to St. Louis at Modesto, is now the Executive Chef for GRG. Burch, who was recently recognized by St. Louis Magazine as a member of

the “A-list Award Dream Team: 5 Restaurant Pros,” is the newest Dining Room Manager and sommelier at Gamlin Whiskey House. Nationally recognized spirits expert Dustin Parres has taken the helm at Sub Zero Vodka Bar as the general manager.

“It’s an exciting time for our business. 1764 Public House has been up and running for a little more than a year now, and we recently discovered some great opportunities for growth at Gamlin Whiskey House and Sub Zero Vodka Bar,” GRG Proprietor Lucas Gamlin says.

Chef Grace, most recently the Executive Chef at the Whittemore House at Washington University, will develop new menu concepts and oversee operations of the kitchens at all three GRG restaurants, 1764 Public House, Sub Zero Vodka Bar, and Gamlin Whiskey House. 

“Grace’s focus on using local, fresh ingredients to bring unique flavors to our guests aligns perfectly with our focus as a restaurant group. We are excited to see what she develops for the restaurants,” Lucas Gamlin says.

“Dustin knows vodka better than anyone, and he is one of our most experienced team members. His skill set and background make him the perfect fit to transition to the role as the general manager at Sub Zero Vodka Bar. The enthusiasm he brings to the restaurants every day is infectious, and we wanted our entire team to have the opportunity to learn from one of the best in the industry,” GRG Proprietor Derek Gamlin says.

Michael Burch


Burch’s hospitality career started as a dining room captain at Mario Batali’s Esca in New York City nearly two decades ago. Through the years he gained experience at some of the best-known fine dining establishments and steakhouses in the United States, and he earned his Level II Sommelier certification.

“Burch’s hospitality experience is a strong asset that will help ensure our guests continue to have a positive, memorable experience every time they visit Gamlin Whiskey House. We are also looking forward to working with him on our wine program,” Derek Gamlin says.
