The Future of Culinary in Kansas City Panelist
Todd Walline will be celebrating his 19th year as the Executive Chef and Director of Food and Beverage at Blue Hills Country Club in November of 2017. Blue Hills Country Club is the premier family club of Kansas City with 680 members and $2.1 million in food and beverage sales and a combined staff of 60 kitchen and service employees. Todd is a graduate of the Johnson County Community College Culinary Apprentice Program one of the few remaining traditional apprentice programs in the nation. Todd was an Adjunct Professor of Culinary Arts from 2010-2016 at JCCC. While at JCCC Todd was asked to be a member of the college culinary competition team. That led to multiple competitions both as a competitor and coach over the course of his culinary career culminating at the IKA Culinary Olympics in 2016. He is an active member of the American Culinary Federation in which he serves as the Vice President of the Greater Kansas City Chapter. He was awarded the chapter Chef of the Year Medallion in 2013.
Session Description: Chef Martin will be hosting an educational session consisting of a panel discussion. This panel will cover topics such as culinary trends, dietary restrictions, career options for recent graduates, and the distinction between chefs from various regions and venues.
